Servings: 4    Serving size: 2 cups    Preparation time: 25 minutes

3 Tablespoons Olive oil 2 Tablespoons Vinegar, balsamic
2 medium Garlic clove, crushed 3/4 teaspoon Thyme, Ground
1/4 teaspoon Pepper 1 pound Needham Sliced Beef Steak
4 cups Spinach 8 ounces Corn, frozen
1 medium Onion, red 4 ounces Pepper, red, roasted
3 Tablespoons Vinegar, balsamic

 In medium bowl, mix first 5 ingredients. Add thawed Needham Sliced Beef Steak; toss to coat. Set aside. Arrange spinach on serving platter. Remove beef from marinade (reserve marinade). Heat large skillet over medium-heat until hot. Add beef (half at a time) and stir fry for 1 minute until pink is gone- DO NOT OVER COOK. Add corn, onion slices, red pepper. Cook until warm -- 30 seconds. Spoon onto greens. In skillet, add reserved marinade & rest of vinegar. Bring to boil. Spoon over salad and serve.
