Making the Most of the Roast

If your like many operators, you probably serve your fair share of roast beef. And whether you cook & slice the roast to order, or purchase it pre-cooked, you may find yourself with leftovers. Why not add a bit of imagination & value to your menu with some of these usage ideas.

 Beef Up Breakfast
 

Soups 
  • Roast Beef Hash: Combine diced roast beef with chopped onion & diced potatoes; serve with poached or fried eggs.
 
  • Extend prepared or homemade soups such as Beef & Barley and Minestrone with the addition of diced roast beef.
  •  
     
  • Yorkshire Beef Benedict: Top a crumpet or English muffin with thin slices of roast beef, mustard-hollandaise sauce (blend dry mustard powder with prepared hollandaise) & a poached egg.
  •    
     

     Salads
     
    • Greek Beef Salad: Add julienned roast beef to spinach leaves, cherry tomatoes, feta cheese, Greek olives & red onion slices; toss with a lemon-dill dressing.
     
  • South-of-the-Border Scramble: Scramble eggs with cubed roast beef, mild jalepeno peppers, salsa & shredded cheese; serve in a tortilla shell or warm flour tortilla.
  •  
     
    • Beef Cobb Salad: Add small cubes of roast beef to the traditional cobb salad fixings; finely chopped crisp bacon, tomato, hard-boiled egg, avocado & cheese.
     
     
    • Beef Biscuits n' Gravy: Serve shaved roast beef over warm buttermilk biscuits; top with gravy.
     
    • Thai Beef Salad: Combine sliced romaine lettuce, grated carrot, thinly-julienned red onion & chopped fresh mint in a dressing made with oil, rice vinegar, lime juice, sugar & soy sauce. Top with thin strips of roast beef.
     
     
  • Beef Croissant Sandwich: Serve thinly shaved roast beef on a warm croissant with a fried or scrambled egg & cheese.

    •  Pasta: Add strips of roast beef to pasta dressed in pesto sauce; toss in slivered sun-dried tomatoes & top with shaved Parmesan cheese.
     

     Appetizers
     
    • Antipasto Skewers: Marinate roast beef cubes, cherry tomatoes, quartered mushrooms, artichoke hearts, bell peppers, mozzarella cheese & olives in an Italian vinegrette dressing; serve on skewers.
     
  •  Pizza: Enhance your favorite pizza by topping it with strips of roast beef.
